A fire pit surprise!

Has anyone here ever heard of the food “damper”?

Well, it’s sorta like the S’more of the Australian outback.
It’s essentially bread dough that you put into the ashes of a fire (after it’s gone out), and let it bake right in the ashes.  So yes, it comes out all covered in soot, but it turns out it is kinda tasty that way!

My Australian roommate calls it “Bush bread”

We chose to make a sweet bread with nuts and cranberries, but you can also make it savory.
Here’s how we did it:

Ingredients:

  • 3 cups of flour
  • 2 tablespoons of sugar
  • 2 teaspoons baking soda
  • dried cranberries and nuts (you can use anything you want that sounds yummy)
  • 1-2 cups of water

FIRST:  Make a fire in a firepit, fireplace, chimnea, etc!  Let it burn down for at least an hour until it is just a pile of hot ashes and embers.

Mix the first 4 ingredients in a bowl, then add enough water so that when you finish mixing it looks sorta sticky but not floury:

Split the dough into two pieces, and roll in flour, so that it is no longer sticky:

Put the dough into the ashes (be careful, they should still be very hot).  Cover with more ashes (yes, completely covered—trust me):

Wait for about 35 minutes.  To test if your bread is ready, pull it out and “knock” on the top. If it’s firm and sounds sorta hollow, it’s done!

Yum!  Surprisingly, the ashes don’t actually taste too strongly, but give it a fun outdoorsy sorta feeling.  We spread jam on it and it was absolutely amazing.
You can replace the nuts and berries with chocolate, marshmallows, coconut flakes, granola, or anything you want!   To make it a savory bread, just leave out the sugar, add a teaspoon of salt and add something more savory as a mixer, like sun-dried tomatoes or cheese!
